A Nourishing Soup Perfect for Pregnancy & Postnatal Recovery
Inspired by a recipe we saw on the Green Child website, we made this delicious soup last week and it’s amazing! Full of goodness, it’s perfect to nourish a new mum or to pack yourself and your baby full of nutrients during pregnancy. Make up a batch or two and freeze it for when you really need a pick me up – or to take to a friend with a new babe.
Ingredients
8 large vine tomatoes, halved
1 bulb of garlic
1 tbsp olive oil
2 tsp sea salt
1 tsp black pepper
1 tsp tarragon for tomatoes and 1 tsp for soup
1 large onion, chopped
2 limes, chopped into wedges
1 tsp oregano
16 fl oz vegetable stock
3 tsp vegetable bouillon powder
2 cups of water
1 handful kale, chopped
Limes, chopped into wedges
Crusty bread and butter, to serve
Method:
Preheat the oven to 180oC. Line a baking sheet with baking paper and throw on the tomatoes, all the cloves of garlic, the tarragon, salt and pepper. Drizzle with olive oil and roast for around 50 minutes.
Saute the onion, the rest of the tarragon and the oregano until the onions are soft. Add in the roasted tomatoes and herbs (squeeze the garlic out of the skins at this point too), the stock, water, veg bouillon powder and kale and bring to the boil.
Blitz in a blender until smooth.
Serve with lime wedges and bread and butter.
