When we read about these cupcakes that are said to induce labour, we had to share! Who knows if it works – who’s willing to try?!

When 40 weeks is approaching and you’re due to have a baby, the world and its wife has something you can try to induce labour. “Eat a hot curry, that got me going.” “I went into labour when I ate 14 pineapples.” “Have you tried walking a lot?” But this is something we’d not heard of until recently. Cappellino’s Crazy Cakes in Charlottesville, America claim that over 150 women have given birth after eating one of their lemon drop cupcakes! Who knows if it works, but when you’re overdue and you’ll try anything, what’s the harm in eating cake. There’s nothing untoward in the ingredients so if it does work, we can only assume it’s the mix of ingredients!

INGREDIENTS
For the cakes
- 1 cup margarine, softened
- 2 cups sugar
- 3 eggs
- 2 teaspoons grated lemon peel
- 1 teaspoon vanilla extract
- 3 1/2 cups plain flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups sour cream
For the Frosting
- 3 tablespoons margarine, softened
- 2 1/4 cups icing sugar
- 2 tablespoons lemon juice
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon grated lemon peel
- 1 tablespoon milk
DIRECTIONS
1. Preheat the oven to 350°F.
2. Cream the margarine and sugar. Beat in the eggs one at a time. Mix in lemon peel and vanilla.
3. Combine dry ingredients, then add to creamed mixture alternately with sour cream.
4. Fill muffin cases with cake mix. Bake at 350°F for 25-30 minutes, or until a skewer comes out clean.
5. Cool for 10 minutes; remove to wire racks to cool completely.
6. For frosting, cream margarine and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel, and milk then beat until smooth. Frost cupcakes.
